What is Chinese Liquor

What is Fen Flavor Baijiu

Fen flavor baijiu is one of the earliest flavors of Chinese liquor. Its unique “Steaming, Double Fermentation, and Underground Pot Fermentation” production process is known as a model of Chinese solid-state fermentation liquor production technology and the foundation of Chinese white wine flavors.

Fen flavor baijiu belongs to the Daqu category. Its characteristics are mainly ethyl acetate aroma, which has a similar aroma to floral and fruity aroma; supplemented by ethyl lactate aroma, it has an elegant and pure complex aroma.

The body of the liquor highlights the style characteristics of elegance, freshness, softness, sweetness, and cleanliness.

Process Characteristics of Fen Flavor Baijiu

Raw material selection
Fen flavor baijiu mainly uses sorghum as brewing raw material, and uses medium-temperature Daqu made from barley and peas as saccharification fermentation agent. Sorghum contains high starch and low fat, which is conducive to the production of alcohol during the fermentation process.
Solid-state fermentation
Different from traditional liquid fermentation, Fen flavor baijiu adopts solid-state fermentation, which can increase the aroma components of the liquor and make it more intense.
Underground vat fermentation
The method of underground vat fermentation helps to maintain the hygiene of the production environment, while making the baijiu composition relatively simple and easy to operate and manage. It can also prevent the contamination of bacteria in the soil, greatly reduce the contamination of bacteria, and ensure the purity of the liquor.
Steaming and clearing the dregs
The steaming and dregs cleaning method focuses on the purity of aroma and the thorough cleaning of dregs, which is a typical dregs cleaning process. The steaming and roasting, small fermentation tank volume, high fermentation temperature and high wine yield are the unique features of the fermentation of Fen flavor baijiu.
