Fen Flavor Baijiu

Fen flavor baijiu is one of the earliest-formed aroma types in China. Its unique production process, characterized by “double distillation and earthenware jar fermentation,” is regarded as a model of China’s solid-state fermentation baijiu production techniques. It is hailed as the “foundation of China’s baijiu aroma types.”

Fen flavor baijiu belongs to the Daqu liquor category. The characteristics of fen flavor baijiu are that the main aroma is ethyl acetate, which is similar to the aroma of fruits and flowers; ethyl lactate is supplemented by an elegant and pure complex aroma. It is similar to the aroma of alcohol, but it has an elegant and comfortable aroma when you smell it carefully, without other miscellaneous aromas.
The body of the liquor highlights the style characteristics of light, refreshing, soft, sweet and clean.

Process Characteristics of Fen Flavor Baijiu

Raw material selection
Fen flavor baijiu mainly uses sorghum as brewing raw material, and uses medium-temperature Daqu made from barley and peas as saccharification fermentation agent. Sorghum contains high starch and low fat, which is conducive to the production of alcohol during the fermentation process.
Solid-state fermentation
Different from traditional liquid fermentation, Fen flavor baijiu adopts solid-state fermentation, which can increase the aroma components of the baijiu and make it more intense.
Ground jar fermentation
The method of ground jar fermentation helps to maintain the hygiene of the production environment, while making the baijiu composition relatively simple and easy to operate and manage.
