Hundred Years of Culture Baijiu Factory

brewery

Xinghua Jiudu Baijiu Industry is located in Fenyang City, Shanxi Province, which is the largest production base of fen flavor baijiu in China. Fenyang is the famous hometown of liquor in China and the birthplace of Chinese baijiu and baijiu culture. The factory originated in 1915, and after more than a hundred years of development, it has become a modernized enterprise with a grand scale from the initial small brewery.

Xinghua Jiudu Baijiu Industry has inherited the “Seven Musts” brewing techniques, the rarity, uniqueness, fineness and accuracy of its craftsmanship, which pioneered the first Chinese sweet and clear-flavored baijiu, and ensures that the qibifang baijiu continues to maintain its noble quality of a thousand years of clear and natural flavor.

Xinghua Village Brewing History

The Baijiu-making culture of Xinghuacun dates back to the Yangshao Culture period 6,000 years ago, when archaeological discoveries of “small-mouthed pointed-bottom urns” confirmed the existence of artificial grain alcohol production. Through four major technical innovations-the “sediment settling method” of Shang and Zhou dynasties, the “filtering with wine vessels (youli)” method of the Warring States period, the “wine filtration technique” of Han and Wei dynasties, and the “distillation technique” of Tang and Song dynasties.” Fen Qing” recorded in the Book of Northern Qi(561 CE)marked the maturity of Fen-flavor baijiu craftsmanship.

Our Advantages

37°-north-latitude

Latitude 37°N is known as “Earth’s Lifeline”. Along this mystical latitude arose two ancient civlizations—Greek civilization and Huaxia civilization. lt also nurtured world-renowned wines and spirits, such as Bordeaux wine from France; Sicilian champagne from ltaly; and Yantai whisky from China. Notably, Xinghua Village in Shanxi—honored as “China’s First Famous Baijiu Village”—is also situated precisely on this latitude.

It is no accident that Xinghua Village has become the birthplace of Chinese liquor and Chinese liquor culture, because it has unique natural advantages, mainly good water. Another reason is that Xinghua Village has a history of winemaking for more than 6000 years. For thousands of years, many microbial populations that are conducive to winemaking have formed in the air and soil of Xinghua Village. After long-term selection, elimination, and reproduction, these microbial populations have formed a unique microbial system for liquor. Beijing microbiologists have confirmed that the liquor microbial system has indeed settled in Xinghua Village and cannot survive without it!

Microorganisms are the key to the quality of liquor, so good water plus a unique liquor microbial system are enough to brew a more mellow and fragrant baijiu.
