What Is Original Liquor?
Original liquor is an important concept in the production of baijiu. It refers to the base baijiu obtained directly after the fermentation and distillation of grain (the original liquor liquid that has not been blended, added to, or diluted).
Key Features of Original Liquor
No additional additives : Original liquor is made solely from grains and water through fermentation and distillation, without the addition of flavorings, spices, alcohol, or other external substances. The composition of the original liquor is entirely the result of natural fermentation.
Pure and unique flavor: Original liquor retains flavor compounds such as esters, alcohols, and acids produced during fermentation, resulting in a bold taste and direct, distinct aroma.
Used as base baijiu for blending: Can be used to blend standardized finished white spirits, mix cocktails, and make liqueurs, etc.

Liqueur is a beverage made from distilled spirits as a base, with edible ingredients (such as fruits, flowers, and Chinese herbs) added through processes such as maceration, distillation, and fermentation. Its core feature is the incorporation of the flavors and components of other ingredients into the base spirit, thereby altering the style of the original base spirit.
Characteristics of Liqueur
Liqueur is a beverage made from distilled spirits as a base, with edible ingredients (such as fruits, flowers, and Chinese herbs) added through processes such as maceration, distillation, and fermentation. Its core feature is the incorporation of the flavors and components of other ingredients into the base spirit, thereby altering the style of the original base spirit.
Diverse product types: Based on the ingredients, they can be categorized into fruit and flower liqueurs (such as osmanthus, rose petals, and sea buckthorn), medicinal and edible liqueurs (such as Bamboo Leaf Green), and tonic liqueurs (such as Cordyceps sinensis).
Nutritional: Liqueur incorporates plant and animal extracts that can be used for both medicinal and edible purposes, such as goji berries and red dates, as well as medicinal foods like licorice and tea polyphenol extracts. It contains a variety of vitamins, minerals, amino acids, and other nutrients beneficial to human health.
Unique flavor: The organic combination of plant and animal aroma compounds and the base liquor naturally creates a variety of aromas, including herbal, fruity, floral, and woody.
Soft taste: While maintaining the basic characteristics of baijiu, the liqueur’s stimulating properties are reduced, resulting in a softer, rounder, and more fragrant taste. The alcohol content is much lower than baijiu, generally between 28-38% alcohol, making it easier to drink.
Versatile usage: It is suitable for daily drinking, family gatherings, and can also be used as a gift (such as high-end nourishing liqueur). Due to its soft taste, it is more popular among women and young “tipsy” enthusiasts.
